Turned out my version of the iPhone (3.0.1) wasn't supported by xcode. On Apple's site there is a bulletin that advises running the following: ln -s /Developer/Platforms/iPhoneOS.platform/DeviceSupport/3.0\ \(7A341\) /Developer/Platforms/iPhoneOS.platform/DeviceSupport/3.0.1 That did it.
